For those who dream of a double dose of Hazy… BALTER Dazy has just landed and is ON TASTING TODAY! See below for more details. At CRAFT we love beer and, of course, wine! So we’re especially excited when the best of both worlds collide. This time, in the form of a special new range by WAYWARD BREWING CO. of Camperdown, NSW. The DISCOVERY SERIES launches with three inaugural releases… Ripasso Rosso, Ripasso Bianco and Balthazar Imperial Stout…all hand bottled in to 375ml champagne bottles …
Ripasso Rosso & Ripasso Bianco 6.1%
Ripasso is a winemaking technique where wine is re-fermented on grape skins to give it added depth and intensity. For our Ripasso, we’ve applied this concept to beer instead; fermenting a classic farmhouse ale on skins from our friends at Tyrrell’s Wines. Primary ferment was followed by four months maturation in 2000L French Oak Foudres alongside a Brett-dominant wild yeast blend. Layers of delicately balanced malt, citrus and spice intertwine with gentle acidity and fruit character from grapes; all of which is underpinned by savoury French oak and funk from the Brett, blurring the boundary between wild fermented wine and beer. Ripasso Rosso 2019 was brewed using post-ferment Four Acres Shiraz marc, from vines planted in 1879.
Ripasso Bianco 2019 was brewed using Belford Single Vineyard Chardonnay marc, from vines planted in 1991.
This bold Imperial Stout offers up intensely layered aromatics of caramel, coffee, chocolate and burnt toffee, intertwined perfectly with subtle whiskey and vanilla notes courtesy of six months maturation in ex-Jack Daniels barrels. On the palate expect a rich, complex and mouth filling beer with flavours of coffee and cacao carrying all the way through to a well-rounded finish.

We have the A-Z of beer for you at Craft this week. Or at least, ACHEL to WILDFLOWER (we’ll come back to you on the X Y Z)!
NEW ARRIVALS from WILDFLOWER … with the return ST FLORENCE, their annual foray into wine grapes and wild ale. Whole bunches of grapes are left to ferment with the naturally-occurring yeast on their skins, then blended with barrels of WILDFLOWER’S flagship GOLD wild ale. As with last year’s ST FLORENCE release, it’s a grape double feature with two releases: BLACK MUSCAT grapes from Thornbrook Orchard in Orange; and SEMILLON from Tyrrell’s Estate in Pokolbin. Choose your own native wine and beer fermentation adventure! Or better still, choose both adventures. Then venture on to another galaxy with TOO EASY: GALAXY… a bitter wild ale heavily hopped with Australian Galaxy hops. Get it too, before it’s gone!
From beer & wine matches made in heaven to beer & sherry… for the FIRST TIME AT CRAFT… POHJALA from Estonia. We have nabbed a very special beer from their CELLAR SERIES – PIME OO PX – A PEDRO XIMENEZ Sherry Barrel Aged Imperial Stout.
